Apple Pie Inspired Oatmeal

Serves 2


  • 2/3 cup Large Flake Oats

  • 1 apple, peeled and chopped into 1/2-inch pieces

  • 1 tbsp chia seeds

  • 1 tbsp freshly ground flax seeds

  • 1 tsp cinnamon

  • 1/4 tsp ground ginger

  • pinch of salt

  • 1 cup unsweetened almond milk, plus more, if needed

  • 1/2 cup unsweetened applesauce

  • 1/2 cup egg whites

  • 1/2 tsp vanilla

  • 1-2 tbsp maple syrup, or to taste


In a medium pot, over medium-high heat, add oats, apples, chia seeds, flax, cinnamon, ginger, salt, almond milk and applesauce. Bring to a simmer. Once simmering, reduce heat to low. Cook for 8-10 min, stirring often, until oats are tender and most the liquid is absorbed.

Stir in egg whites and vanilla, Stirring constantly, cook for another 1-2 min, until oats are nice and fluffy.

Divide oats between bowls. Top with a drizzle of maple syrup.

Toppings: Sprinkle with some walnuts or a dollop of almond butter
