Oatmeal Carrot Loaf
Great with a cup of tea or coffee, this nourishing loaf is similar in taste to your fav carrot cake, but is sweetened naturally with dates and maple syrup.
Carrots are crunchy superstars loaded with beta-carotene, fiber, and antioxidants, giving you glowing skin, sharp vision, and a happy heart!
2 Cups Large Flake Oats
8 Dates, pitted
1/2 olive or coconut oil
1/4 cup maple Syrup
2 cups shredded carrots
2 eggs
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/2 tsp vanilla
1/4 coconut or walnuts, optional, but delish
Preheat oven to 325F, line a loaf pan with parchment, set aside.
Place all ingredients in a blender, except carrots, and blend until smooth.
Add carrots, pulsing until just combined. Scrape batter in pan, smoothing top. Sprinkle with coconut or walnuts, if using.
Bake for 35-40 mins, until top is firm and a skewer comes out clean.
Let cool before slicing.
