Pumpkin Chia Puddings

"Pumpkin Pie Chia Pudding"

Loaded with protein, fiber & omega 3-s, this fall inspired chia pudding will up your breakfast

Chia seeds are tiny powerhouses packed with fiber, omega-3s, and antioxidants, keeping your energy high, digestion smooth, and heart happy!


1 1/4 cups milk of choice

1/3 cup chia seeds

1/2 cup pure pumpkin puree

1 tbsp maple syrup

1 tsp pumpkin pie spice

1/4 cup vanilla protein powder, optional, but increases protein content

Toppings:

granola, nuts, fruit, almond butter, peanut butter, coconut flakes, hemp seeds, coconut whipped cream etc.


Add all ingredients to a blender. Blend on high speed, for 30-45 sec, until smooth. (NOTE: Blending is optional, but makes for a smoother, fluffier pudding texture.)

Divide chia pudding into individual ramekins or glass jars. Refrigerate for at least 1 hour, to allow chia seeds to thicken, best enjoyed after 4 hours or overnight.

Top with desired toppings and enjoy!
